Join us for another innovative cooking class with Chef Meghan! Nourishing Soups and Cooking Techniques Class! In this class we will cover kitchen basics and cooking techniques while making comforting, nutritious soups for easy weeknight meals. We will be making a Chickpea Tomato Stew, Lemony Chicken Orzo Soup, Broccoli Cheddar Soup, Cheddar Scallion Biscuits, and a Citrus Salad. Come hungry, leave with new skills, and enjoy a meal with your fellow cooks! Facilitated by Chef Meghan (UCCS Center for Active Living): Chef Meghan, a Colorado Springs native, has a degree in Health and Wellness Promotion from UCCS, is an Integrative Nutrition Health Coach, and a Certified Natural Food Chef. After years of struggling with chronic illness, Meghan has found her passion in inspiring others to take control of their health. Meghan incorporates mindful cooking techniques and enjoy teaching others how much fun cooking can be! The Lyda Hill Institute for Human Resilience, with financial support from the CU President’s Fund, launched CREATE in 2022 to foster community and lifetime resilience. FREE introductory artistic and wellness programming, resilience-based workshops and facilitated discussion/support groups are offered FREE to UCCS employees.
